Moist Apple Cake: got the recipe off the net and tweaked it 🙂 This turned out to be very moist! Absolutely delicious especially if you’re apple/cinnamon fan like me! And it’s easy and quick to make 🙂 This recipe has gotten massive good reviews and a +1 from me. Definitely a must try!
Ingredients:
250ml vegetable oil
200g caster sugar ( original recipe: 400g )
275g plain flour
2 teaspoons ground
cinnamon
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 teaspoon vanilla extract
500g cored, peeled and diced apple ( more apples for the apple lover )
*optional: add some of your fav nuts and sultanas
Preparation Method: 1. Preheat oven to 180 C / Gas mark 4. Lightly grease and flour a 20x30cm cake tin. 2. Beat vegetable oil and eggs until foamy. Add the sugar, flour, cinnamon, bicarbonate of soda, salt and vanilla; mix well. Stir in the dice apples. 3. Spoon mixture into prepared tin (it will be very thick). 4. Bake in preheated oven for 30 to 40 minutes. Cool cake in tin for 10 minutes before removing.
Extra treat: Enjoy it with a scoop of vanilla ice cream by the side 🙂
can i use butter or would it alter the texture of the cake? 🙂

Changing a liquid fat (oil) to a solid fat (butter) do alter the taste and texture of the cake 🙂 This recipe turned out well using vege oil, but you could try using butter and see if it’s a texture you like as well.
