Scones

Scones were my fav breakfast in uni – but figured I could try baking them instead of paying 90p each. During summer, I found a recipe online and tweaked it to my liking. These are really moist scones and I love them. Looks like I won’t be buying any more scones in the meantime. 🙂

Ingredients

1 3/4 cup all purpose flour
4 tsp baking powder
1/4 cup white sugar
1/8 tsp salt
5 tbsp unsalted butter
1/2 cup dried currants/ raisins
1/2 cup milk
1/8 tsp vanilla essence

For glazing: 1 egg yolk & 1 tbsp milk

Preparation Method:

1. Preheat oven at 200 C/ 400 F.

2. Beat in butter and sugar.

3. Sift flour, baking powder and salt.

4. Stir in milk till the texture is right (not too sticky )

5. Stir in sultanas.

6. Put scone dough onto greased baking sheet

7. Glaze each with egg +  1 tbsp milk.

8. Bake till slightly brown.
