With birthdays coming up, I’ve baked some Malibu cupcakes over the week for the first time. I truly love trying something new each time and when someone loves Malibu, you have to try and make something they love! 🙂 It was easy to bake. I’ve used my butter cake recipe as a basic batter and added in (lots of) Malibu, Pineapple/Coconut juice and desiccated coconut for added texture.
For the icing, I’ve whipped cream and added in red + black coloring and piped them up, decorating it with a sprinkle of desiccated coconut at the top. They tasted yummy. Even after a night in the fridge, it remained moist and flavorful.
